For me, nothing beats the smell of freshly baked, long fermented, “real” bread and sourdough certainly is that. Whether it’s a delicious savoury sourdough Danish pastry, stuffed with herbs and vegetables, a hot toasted buttery sourdough brioche roll or just a plain simple slice of sourdough bread and butter I just cant get enough of it. Reason enough for me to start a sourdough bakery, I would say, and that’s just what I’ve done.
I am guessing that since you are on my website, you may well have already experienced the delights of a sourdough bread in some form or another, or maybe you want to know a little bit more about what a sourdough actually is. Basically, sourdough is the natural fermentation of flour and water by the wild yeasts and lactobacilli naturally present in ground up grains. Sourdough breads and pastries are nutritionally superior than conventional breads with a lower glycaemic index, easier absorption of the vitamins and minerals naturally present in the grains used and a higher absorption of protein, due to the action of the sourdough on the gluten. So, how many foods can you say are absolutely delicious and packed with health benefits too?
